FAQ

Frequently Asked Questions

1. Why is it so expensive?

We understand. $10 for a 1 oz bag of jerky is expensive compared to other brands. This is due to our high production costs:

  • Bovino contains more than twice the amount of beef by weight compared to average jerky.

A 1 oz bag of beef is actually dried from ¼ lbs of grass-fed beef. This explains why, when we had our jerky tested at Medallion Food Labs, our results yielded 20 grams of protein per 1 oz serving. This is over twice the amount of protein of average jerky by weight.

  • We don’t just use any type of beef, we use 100% grass-fed and grass-finished beef.

The beef we use to make our jerky is sourced from local Bay Area farms whose cattle exclusively feed on grass, are free of antibiotics, and treat their animals with respect and compassion.

  • We use a more expensive cut of beef: eye of round

Through various experiments, we have found that using the eye of round cut for our jerky results in the best chip-like crispy texture, flavor, and size for each piece. Most jerky brands use top round or bottom round, which are 8-12% cheaper than eye of round.

  • Our marinade consists of all organic ingredients.
  • The process to make our jerky is both labor-intensive and time-consuming.

To get our jerky crispy, we must slice each piece at a precise thickness, which must be done consistently. Each thin slice of beef must then be laid out on oven trays delicately, so as not to tear it. It also takes several hours longer to dehydrate our jerky to the point of crispiness, as compared to the shorter dehydration time of typical, chewy jerky. This results in higher labor and overhead fees.
